Ingredients
  

  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 4 pita breads
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 red onion thinly sliced
  • 1 cup plain Greek yogurt
  • ½ cup feta cheese crumbled
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • fresh parsley for garnish

Method
 

  1. Marinate the Chicken: In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add chicken thighs, tossing to coat. Marinate for at least 30 minutes.
  2. Cook the Chicken: Heat a skillet over medium-high heat. Cook chicken for 5–7 minutes per side until golden brown and fully cooked (165°F / 75°C). Let rest for a few minutes, then slice into strips.
  3. Prepare the Feta Tzatziki: In a small bowl, mix Greek yogurt, feta cheese, lemon juice, minced garlic, salt, and pepper until creamy and smooth.
  4. Assemble the Gyros: Spread tzatziki on each pita, add sliced chicken, and top with cherry tomatoes, cucumber, and red onion. Garnish with parsley, roll, and serve warm.

Notes

For a lighter option, use whole-wheat pita or lettuce wraps. Add olives or a drizzle of olive oil for extra Mediterranean flavor. The chicken can also be grilled for smoky depth.
