One Pan Balsamic Chicken

Ingredients
  

Sauce
  • cup Balsamic vinegar
  • 2 tbsp Honey
  • 2 tbsp Olive oil or avocado oil
  • 2 cloves Garlic, minced
  • 1 tsp Italian seasoning
  • 1 tbsp Dijon mustard
Tomato Mozzarella
  • 8 oz Grape tomatoes, halved
  • 8 oz Fresh mozzarella balls (ciliegine or pearls)
  • 2 tbsp Fresh basil, finely chopped
Chicken
  • 2 lb Boneless, skinless chicken breasts, pounded to even thickness
  • 2 tbsp Avocado oil or other high-heat oil
  • Kosher salt and freshly ground black pepper, to taste

Method
 

  1. In a bowl, whisk together the balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper to taste. Set aside.
  2. In a separate bowl, combine the halved tomatoes, mozzarella balls, and chopped basil. Season lightly with salt and pepper. Set aside.
  3. Preheat oven to 400°F (200°C).
  4. Heat oil over medium-high heat in a large oven-safe skillet. Season the chicken breasts with salt and pepper. Sear the chicken for 1–2 minutes on each side until lightly golden brown.
  5. Pour the prepared balsamic sauce into the skillet. Bring to a quick simmer while scraping up any browned bits from the bottom of the pan.
  6. Remove from heat and spoon the tomato-mozzarella mixture evenly over the chicken.
  7. Bake uncovered for 18–23 minutes or until the chicken is cooked through (internal temperature 165°F / 74°C). Let rest for 5 minutes before serving.

Notes

For extra depth of flavor, drizzle the finished dish with a bit more balsamic glaze before serving. Serve with roasted vegetables, mashed potatoes, or a fresh green salad.
