Ingredients
  

For the Salad
  • 4 medium carrots coarsely grated
  • 1 apple diced
  • ¾ cup craisins dried cranberries
  • ¼ cup purple or sweet onion finely diced
For the Dressing
  • ½ cup mayonnaise real mayo or vegenaise
  • 2 tsp lemon juice
  • ½ Tbsp sugar
  • tsp sea salt or to taste
  • pinch black pepper freshly ground

Method
 

Dressing
  1. In a small bowl, combine mayonnaise, lemon juice, sugar, salt, and pepper; stir until well mixed.
Salad Preparation
  1. Grate carrots (using a food processor if desired) and transfer to a large mixing bowl. Dice the apple and finely dice the onion, then add them to the bowl along with the craisins.
Combine and Serve
  1. When ready to serve, add the prepared salad dressing to the carrot and apple mixture, stirring to combine everything.
