Ingredients
  

  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 cup Brown sugar, packed
  • 8 oz Cream cheese, softened
  • 2 large Eggs, room temperature
  • 1.5 teaspoons Vanilla extract
  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 pinch Salt
  • 0.5 cup Caramel sauce
  • for topping Flaky sea salt

Method
 

  1. Step 1: Preheat the Oven
    Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. Step 2: Make the Cookie Dough
    In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes). Beat in one egg and 1 teaspoon of vanilla extract until smooth and fully combined. Add flour, baking soda, and a pinch of salt, then mix until just combined. Avoid overmixing.
  3. Step 3: Prepare Cheesecake Filling
    In a separate bowl, beat the cream cheese until smooth. Add the remaining egg, 1/4 cup sugar, and 1/2 teaspoon vanilla extract. Mix until creamy and lump-free.
  4. Step 4: Assemble the Cookies
    Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheets. Gently press the centers to make small indentations, then fill each with about 1 teaspoon of cheesecake filling.
  5. Step 5: Bake
    Bake for 12–14 minutes, or until edges are lightly golden. Let cookies cool on the sheet for 5 minutes before transferring to a cooling rack to cool completely.
