- Step 1: Preheat the Oven
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside. - Step 2: Make the Cookie Dough
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes). Beat in one egg and 1 teaspoon of vanilla extract until smooth and fully combined. Add flour, baking soda, and a pinch of salt, then mix until just combined. Avoid overmixing. - Step 3: Prepare Cheesecake Filling
In a separate bowl, beat the cream cheese until smooth. Add the remaining egg, 1/4 cup sugar, and 1/2 teaspoon vanilla extract. Mix until creamy and lump-free. - Step 4: Assemble the Cookies
Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheets. Gently press the centers to make small indentations, then fill each with about 1 teaspoon of cheesecake filling. - Step 5: Bake
Bake for 12–14 minutes, or until edges are lightly golden. Let cookies cool on the sheet for 5 minutes before transferring to a cooling rack to cool completely. - Step 6: Finish with Caramel and Salt
Once cooled, drizzle each cookie generously with caramel sauce and sprinkle lightly with flaky sea salt. Serve and enjoy!
Notes
For extra flavor, use homemade salted caramel sauce. Store cookies in an airtight container in the refrigerator for up to 5 days. Let them sit at room temperature before serving for the creamiest texture.
