Ingredients
  

  • 2 cups All-purpose flour
  • 1.75 cups Granulated sugar
  • 0.75 cup Unsweetened cocoa powder
  • 1.5 tsp Baking powder
  • 1.5 tsp Baking soda
  • 1 tsp Salt
  • 2 large Eggs room temperature
  • 1 cup Whole milk room temperature
  • 0.5 cup Vegetable oil
  • 2 tsp Pure vanilla extract
  • 1 cup Hot brewed coffee
  • 1 cup Granulated sugar
  • 0.25 cup Water
  • 0.5 cup Heavy cream
  • 4 tbsp Unsalted butter
  • 0.5 tsp Sea salt
  • 8 oz Semisweet or bittersweet chocolate chopped
  • 1 cup Heavy cream
  • Sea salt for sprinkling

Method
 

  1. 1. Prepare the cake layers: Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  2. 2. Mix wet ingredients: Add eggs, milk, oil, and vanilla. Mix until just combined. Slowly stir in hot coffee until smooth. Batter will be thin.
  3. 3. Bake: Divide batter evenly among pans and bake for 22–25 minutes, or until a toothpick comes out clean. Cool 10 minutes in pans, then transfer to wire racks.
  4. 4. Make salted caramel: In a saucepan, combine sugar and water over medium-high heat. Cook without stirring until it turns amber. Remove from heat and carefully whisk in cream, butter, and sea salt until smooth. Cool slightly.
  5. 5. Make ganache: Place chopped chocolate in a bowl. Heat heavy cream until just simmering, then pour over chocolate. Let sit 1 minute, then stir until glossy and smooth.
  6. 6. Assemble: Place one cake layer on a serving plate, drizzle caramel sauce, then top with another cake layer. Repeat with the second layer and more caramel. Place the final cake layer on top and frost with ganache.
  7. 7. Finish: Smooth or swirl the ganache with an offset spatula and sprinkle sea salt on top for a stunning finish.

Notes

For an even richer flavor, chill the cake for 30 minutes before serving. You can also drizzle extra salted caramel over each slice before serving.
