- 1. Prepare the cake layers: Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- 2. Mix wet ingredients: Add eggs, milk, oil, and vanilla. Mix until just combined. Slowly stir in hot coffee until smooth. Batter will be thin.
- 3. Bake: Divide batter evenly among pans and bake for 22–25 minutes, or until a toothpick comes out clean. Cool 10 minutes in pans, then transfer to wire racks.
- 4. Make salted caramel: In a saucepan, combine sugar and water over medium-high heat. Cook without stirring until it turns amber. Remove from heat and carefully whisk in cream, butter, and sea salt until smooth. Cool slightly.
- 5. Make ganache: Place chopped chocolate in a bowl. Heat heavy cream until just simmering, then pour over chocolate. Let sit 1 minute, then stir until glossy and smooth.
- 6. Assemble: Place one cake layer on a serving plate, drizzle caramel sauce, then top with another cake layer. Repeat with the second layer and more caramel. Place the final cake layer on top and frost with ganache.
- 7. Finish: Smooth or swirl the ganache with an offset spatula and sprinkle sea salt on top for a stunning finish.
Notes
For an even richer flavor, chill the cake for 30 minutes before serving. You can also drizzle extra salted caramel over each slice before serving.
