- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with nonstick spray.
- In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and fully cooked, about 10 minutes. Add garlic and cook for 1 minute.
- Stir in tomato sauce and Italian seasoning. Simmer for 5 minutes, stirring occasionally. Season with salt and pepper, then remove from heat.
- Meanwhile, cook egg noodles in salted boiling water according to package instructions. Drain and set aside.
- In a large bowl, combine sour cream and cottage cheese. Add cooked noodles, season lightly with salt and pepper, and stir until evenly coated.
- Spread half of the noodle mixture into the prepared baking dish. Top with half of the meat sauce. Repeat layers with remaining noodles and sauce.
- Sprinkle cheddar cheese evenly over the top. Bake uncovered for 30 minutes, until bubbly and cheese is melted.
- Let casserole rest for 10 minutes before serving.
Notes
For extra richness, swap cottage cheese for ricotta. This casserole freezes well and reheats beautifully.
