Ingredients
  

Beef Sauce
  • 1 lb lean ground beef
  • ½ yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) tomato sauce
  • 1 teaspoon Italian seasoning
  • kosher salt, to taste
  • freshly ground black pepper, to taste
Noodles & Dairy
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup cheddar cheese, grated

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with nonstick spray.
  2. In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and fully cooked, about 10 minutes. Add garlic and cook for 1 minute.
  3. Stir in tomato sauce and Italian seasoning. Simmer for 5 minutes, stirring occasionally. Season with salt and pepper, then remove from heat.
  4. Meanwhile, cook egg noodles in salted boiling water according to package instructions. Drain and set aside.
  5. In a large bowl, combine sour cream and cottage cheese. Add cooked noodles, season lightly with salt and pepper, and stir until evenly coated.
  6. Spread half of the noodle mixture into the prepared baking dish. Top with half of the meat sauce. Repeat layers with remaining noodles and sauce.
  7. Sprinkle cheddar cheese evenly over the top. Bake uncovered for 30 minutes, until bubbly and cheese is melted.
  8. Let casserole rest for 10 minutes before serving.

Notes

For extra richness, swap cottage cheese for ricotta. This casserole freezes well and reheats beautifully.
