Ingredients
  

Main Ingredients
  • ½ cup plain Greek yogurt Use room temperature for easier mixing.
  • 3 oz cream cheese, softened Use room temperature for easier mixing.
  • 1 cup almond milk Can substitute with any preferred milk.
  • 2 tbsp pure maple syrup Adjust for sweetness to taste.
  • 1 tsp vanilla extract
  • 1 cup old fashioned oats
  • 1 tbsp chia seeds
  • ½ cup strawberries, diced
  • Pinch salt
  • ½ cup strawberries, chopped
  • 1 tbsp pure maple syrup For the strawberry reduction.

Method
 

Preparation
  1. In a bowl, combine softened cream cheese, Greek yogurt, almond milk, pure maple syrup, and vanilla extract evenly.
  2. Add oats, chia seeds, and salt to the mixture, then mix well.
  3. Stir in diced strawberries.
  4. Transfer the mixture to an airtight container and refrigerate overnight.
Making Strawberry Reduction
  1. In a small pan over medium heat, add chopped strawberries and maple syrup.
  2. Mash the strawberries as they soften and let them simmer, then remove from heat.
  3. Mix the reduction into the overnight oats or store separately for serving.
Serving
  1. Serve the overnight oats chilled, topped with strawberry reduction.
  2. Optionally add fresh slices of strawberries or nuts for extra crunch.

Notes

Overnight oats can be stored in an airtight container in the refrigerator for up to 3 days. If made with a separate strawberry reduction, store it in a separate container.
