- In a bowl, combine softened cream cheese, Greek yogurt, almond milk, pure maple syrup, and vanilla extract evenly.
- Add oats, chia seeds, and salt to the mixture, then mix well.
- Stir in diced strawberries.
- Transfer the mixture to an airtight container and refrigerate overnight.
Making Strawberry Reduction
- In a small pan over medium heat, add chopped strawberries and maple syrup.
- Mash the strawberries as they soften and let them simmer, then remove from heat.
- Mix the reduction into the overnight oats or store separately for serving.
Serving
- Serve the overnight oats chilled, topped with strawberry reduction.
- Optionally add fresh slices of strawberries or nuts for extra crunch.
Notes
Overnight oats can be stored in an airtight container in the refrigerator for up to 3 days. If made with a separate strawberry reduction, store it in a separate container.
