  • 3.5 pieces Boneless, skinless chicken breasts
  • 1 cup Shredded Jack cheese
  • 2 tablespoons Olive oil
  • 2.5 cloves Garlic, minced
  • 1 cup Low-sodium chicken broth
  • 0.5 cup Sour cream
  • to taste Salt and pepper
  • for garnish Chopped green onions
  • for garnish Paprika

Method
 

  1. Step 1: Preheat oven to 375°F (190°C). Rub olive oil over the chicken breasts and season with salt and pepper on both sides.
  2. Step 2: In a large skillet over medium-high heat, sear the chicken for about 5 minutes per side, until golden brown. Remove from heat.
  3. Step 3: Add minced garlic to the pan and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Step 4: Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the sour cream and let the mixture simmer and bubble gently for about 5 minutes until slightly thickened.
  5. Step 5: Return the seared chicken breasts to the skillet, spooning some sauce over each piece. Top with shredded Jack cheese.
  6. Step 6: Transfer the skillet to the preheated oven and bake for about 15 minutes, or until the cheese is melted and bubbly.
  7. Step 7: Garnish with chopped green onions and a sprinkle of paprika before serving. Enjoy hot with mashed potatoes, rice, or steamed vegetables.

Notes

For extra flavor, try adding caramelized onions or sautéed mushrooms to the sauce before baking. You can also substitute Monterey Jack with Pepper Jack for a spicy twist.
