  • ½ cup pumpkin puree (canned or fresh)
  • 4 eggs
  • 2 ½ Tbsp light-brown sugar packed
  • 1 ½ tsp vanilla extract
  • 1 ¼ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • tsp cloves
  • 9 slices hearty white bread (1-inch) such as rustic French bread, or brioche
  • Butter for griddle

  • Oven
  • Electric Griddle
  • Shallow Dish
  • Whisk
  • Oven Rack
  • Spatula

Method

Preparation
  1. Preheat oven to 225°F and an electric griddle or non-stick skillet to 350°F.
  2. In a shallow dish, whisk together pumpkin, eggs, brown sugar, vanilla, cinnamon, nutmeg, ginger, and cloves until well combined; then add half and half and whisk until blended.
  3. Dip bread into the egg mixture, soaking both sides, then butter the griddle and place the soaked French toast on it.
  4. Cook until golden brown on the bottom, then butter the griddle again, flip the French toast, and cook until golden brown on the opposite side.
  5. Transfer slices to the preheated oven on an oven rack to keep warm for up to 10 minutes, which also helps them cook through.
  6. Serve warm, with maple syrup if desired.

Notes

The oven can be used to keep the French toast warm and ensure it's cooked through. Serve warm with maple syrup if desired.
