Ingredients
  

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.33 cup Unsweetened cocoa powder
  • 0.5 cup Granulated sugar
  • 0.5 cup Unsalted butter, softened
  • 1 whole Large egg
  • 8 ounces Mascarpone cheese
  • 0.25 cup Espresso or strong coffee
  • to taste Cocoa powder, for dusting

Method
 

  1. Step 1: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Step 2: In a medium bowl, whisk together flour, baking powder, cocoa powder, and sugar.
  3. Step 3: In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg until fully combined.
  4. Step 4: Gradually add the dry ingredients to the wet mixture, mixing until just combined and a soft dough forms.
  5. Step 5: Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Step 6: Bake for 10–12 minutes, or until the cookies are set but still soft in the center. Let cool completely on a wire rack.
  7. Step 7: For the filling, mix mascarpone cheese with espresso or strong coffee until smooth and spreadable.
  8. Step 8: Spread the mascarpone mixture onto the flat side of one cookie and sandwich with another. Lightly dust with cocoa powder before serving.

Notes

For an extra indulgent touch, chill the filled cookies for 30 minutes before serving. Store in an airtight container in the refrigerator for up to 3 days.
