- 1. Preheat the Oven: Set oven to 325°F (163°C). Grease a 9-inch springform pan.
- 2. Make the Crust: Combine Oreo crumbs and melted butter in a bowl. Press firmly into the bottom of the pan. Bake for 10 minutes, then let cool.
- 3. Prepare the Cheesecake Batter: In a large bowl, beat softened cream cheese until smooth. Add sugar and beat until creamy. Mix in sour cream and vanilla extract. Add eggs one at a time, beating well after each addition.
- 4. Create the Chocolate Layers: Divide the batter into three equal parts. Stir melted semi-sweet chocolate into one portion, white chocolate into another, and milk chocolate into the third.
- 5. Assemble the Cheesecake: Pour the three batters alternately into the prepared crust to form distinct layers or a marbled pattern.
- 6. Bake: Bake for 60–70 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the door slightly ajar, allowing the cheesecake to cool for 1 hour.
- 7. Chill: Refrigerate for at least 4 hours, or preferably overnight, to fully set the cheesecake.
- 8. Decorate and Serve: Before serving, top with whipped cream, chocolate shavings, and fresh berries for a decadent finish.
