  • 1 bag frozen tater tots (32 ounces)
  • 1 pound ground beef
  • ½ cup white onion diced
  • 2 tablespoons taco seasoning
  • 1 teaspoon seasoned salt
  • 16 ounces Velveeta cheese cubed
  • 1 cup sharp cheddar cheese shredded
For Garnish
  • ½ cup Roma tomatoes diced
  • 4 pieces green onions diced
  • ½ cup sour cream
  • 1 medium avocado peeled and cut into cubes
  • 1 tablespoon cilantro
  • freshly squeezed lime juice

Method
 

Preparation
  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Arrange tater tots in a single layer on the prepared baking sheet and bake for 20-30 minutes until crispy and browned.
Cooking the Beef
  1. While tots bake, cook ground beef and diced onion in a large skillet over medium heat for 8-10 minutes until beef is no longer pink. Stir in taco seasoning and set aside.
Assembly and Final Bake
  1. Remove crispy tots from the oven, season with salt, then top with cooked ground beef, cubed Velveeta, and shredded cheddar cheese.
  2. Bake for 5 more minutes, or until the cheese is completely melted.
Garnish and Serve
  1. Remove from oven and serve immediately, garnished with diced tomatoes, green onions, sour cream, avocado, and cilantro.

Notes

For extra spice, add a pinch of cayenne pepper to the ground beef. Feel free to customize toppings with your favorite salsa, jalapeños, or black olives.
