Preparation
- Preheat the oven to 450°F and line a baking sheet with parchment paper.
- Arrange tater tots in a single layer on the prepared baking sheet and bake for 20-30 minutes until crispy and browned.
Cooking the Beef
- While tots bake, cook ground beef and diced onion in a large skillet over medium heat for 8-10 minutes until beef is no longer pink. Stir in taco seasoning and set aside.
Assembly and Final Bake
- Remove crispy tots from the oven, season with salt, then top with cooked ground beef, cubed Velveeta, and shredded cheddar cheese.
- Bake for 5 more minutes, or until the cheese is completely melted.
Garnish and Serve
- Remove from oven and serve immediately, garnished with diced tomatoes, green onions, sour cream, avocado, and cilantro.
Notes
For extra spice, add a pinch of cayenne pepper to the ground beef. Feel free to customize toppings with your favorite salsa, jalapeños, or black olives.
