Preparation
  1. In a bowl, mix together the peanut butter, powdered sugar, and vanilla extract until smooth.
  2. Shape the mixture into heart shapes and place them on a baking sheet lined with parchment paper.
  3. Freeze the hearts for about 30 minutes.
Coating
  1. Meanwhile, melt the chocolate chips in a microwave or double boiler until smooth.
  2. Dip each peanut butter heart into the melted chocolate, ensuring it's fully coated.
  3. Place back on the parchment paper and add sprinkles if desired.
