Ingredients
  

  • 3 Overripe bananas, mashed
  • 4 tablespoons Vegan butter, melted
  • 0.75 cup Maple syrup
  • 1 cup Unsweetened almond or oat milk
  • 1 teaspoon Vanilla extract
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 1.5 cups All-purpose or gluten-free flour
  • 1 cup Old fashioned rolled oats
  • 4 tablespoons Vegan butter, melted (for swirl)
  • 0.33 cup Light brown sugar (for swirl)
  • 2 tablespoons Cinnamon (for swirl)
  • 0.75 cup Powdered sugar (for frosting)
  • 2 tablespoons Vegan butter, melted (for frosting)
  • 2 oz Vegan cream cheese, softened (for frosting)

Method
 

  1. Step 1: Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Step 2: In a large bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract. Stir well.
  3. Step 3: Add baking powder, baking soda, cinnamon, salt, flour, and oats. Stir until just combined—do not overmix.
  4. Step 4: Pour half the batter into the loaf pan.
  5. Step 5: Mix melted vegan butter, brown sugar, and cinnamon for the swirl. Spread half over the batter in the pan.
  6. Step 6: Add the remaining batter, then top with the rest of the cinnamon swirl mixture. Use a knife to gently swirl it into the batter.
  7. Step 7: Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool completely.
  8. Step 8: For the frosting, whisk together powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth. Spread over the cooled bread.
  9. Step 9: Slice and enjoy warm or at room temperature!

Notes

This banana bread keeps well covered at room temperature for 2 days or refrigerated for up to 5 days. For extra decadence, drizzle additional frosting right before serving.
