Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter melted
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Buttermilk
  • 2 cups Apples peeled and diced (Granny Smith or Honeycrisp)
  • 0.5 cup Chopped pecans or walnuts optional
  • 0.25 cup Brown sugar
  • 1 teaspoon Ground cinnamon for topping
  • 1 cup Powdered sugar
  • 2 tablespoons Milk
  • 0.5 teaspoon Vanilla extract for glaze

Method

  1. 1. Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. 2. Mix dry ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  3. 3. Combine wet ingredients: In another bowl, whisk melted butter, eggs, vanilla extract, and buttermilk until smooth.
  4. 4. Combine batter: Add wet ingredients to dry ingredients, stirring until just combined. Fold in diced apples and nuts (if using).
  5. 5. Layer and top: Pour half the batter into the loaf pan, sprinkle with half the brown sugar-cinnamon mixture, then repeat with remaining batter and topping.
  6. 6. Bake: Bake for 50–60 minutes, or until a toothpick comes out clean. Cover with foil if the top browns too quickly.
  7. 7. Cool and glaze: Let cool for 10 minutes in the pan, then transfer to a cooling rack. Whisk powdered sugar, milk, and vanilla until smooth, and drizzle over cooled bread.
  8. 8. Serve: Slice and enjoy warm or at room temperature with coffee or tea.

Notes

For extra flavor, toss apples in a tablespoon of brown sugar and cinnamon before folding into the batter. This bread freezes beautifully—wrap tightly and store for up to 2 months.
