Ingredients
  

For the Cake Layers
  • 3.25 cups cake flour
  • 1 teaspoon sea salt
  • 1 tablespoon baking powder
  • 0.25 teaspoon baking soda
  • 4 large eggs (room temperature)
  • 1 cup whole milk
  • 0.33 cup vegetable oil
  • 0.5 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
For the Frosting
  • 8 oz cream cheese, softened
  • 8 oz mascarpone cheese, softened
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 2 cups powdered sugar
For the Filling and Decoration
  • 4 cups fresh strawberries, raspberries, and blueberries rinsed and dried

Method
 

  1. Step 1: Prepare the Cake Pans
    Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line with parchment paper.
  2. Step 2: Mix Dry Ingredients
    In a bowl, whisk together cake flour, salt, baking powder, and baking soda.
  3. Step 3: Mix Wet Ingredients
    In another bowl, mix eggs, milk, oil, sour cream, and vanilla extract until combined.
  4. Step 4: Cream Butter and Sugar
    In a large mixing bowl, beat butter and sugar until light and fluffy. Gradually alternate adding the wet and dry mixtures, beginning and ending with the wet ingredients.
  5. Step 5: Bake the Cake
    Divide batter evenly between pans and bake for 40–45 minutes or until a toothpick inserted in the center comes out clean. Cool completely, then wrap in plastic wrap and freeze for at least 2 hours.
  6. Step 6: Make the Frosting
    Beat butter, cream cheese, and mascarpone together until fluffy. Add vanilla and almond extracts, then mix in powdered sugar. In a separate bowl, whip heavy cream until stiff peaks form, then gently fold it into the cheese mixture.
  7. Step 7: Assemble the Cake
    Slice cakes in half to make four layers. Place one layer on a serving platter and spread with ½ cup frosting. Add a layer of berries and another thin layer of frosting. Repeat with remaining layers.
  8. Step 8: Decorate
    Spread remaining frosting over the top and sides. Decorate with fresh berries and refrigerate until ready to serve.

Notes

For an elegant finish, dust with powdered sugar or drizzle with honey before serving. The cake tastes even better the next day after the flavors meld. Keep refrigerated until serving.
